Tina’s Lamb Shepherd’s pie

Gluten/Dairy/Soy Free

(Vegan: Just omit lamb)

 

Note: You can eliminate the crust. However, I haven’t tried that so you will have to reduce the time in the oven and experiment. I’ll try without crust next time.

 

Ingredients

 

  • Pie Crust (I used a GF premade pie crust but you can totally make your own)

  • 1 Head of Cauliflower

  • 2 Carrots

  • 2 Parsnips

  • 2 Celery sticks

  • ½ Sweet Onion

  • ¼ Teaspoon Cinnamon

  • ½ Teaspoon salt

  • ½ Teaspoon black pepper

  • ½ Teaspoon Poultry Seasoning (Brand listed below. If you don’t have it you can use what you like similar to those three seasonings)

  • ½ Teaspoon Clove powder

  • 3 Cloves of fresh Garlic

  • 2 Tablespoons Coconut Aminos

  • 1 pound of Lamb (Feel free to mix up meats next time for fun but Lamb is my fav!)

 

 

  1. Meat: Fully cook lamb with Salt, Pepper, Cinnamon, Clove Powder and Pepper. Then, let cool and set aside.

  2. Steam the vegetables until soft: In pot or I used an Instant Pot. In the Instant Pot, put trivet in the bottom with 2 cups of water, Carrots, the whole head of Cauliflower (peel & I cut off the stem a little but you don’t have to), Parsnip and Celery in Instant pot on “steam” setting for 1 minute.

  3. Once Instant Pot is done, turn Instant Pot off and quick release the pressure. Open the lid when it’s safe. Once cool enough, strain well. While it’s cooling and draining, go to the next step.

  4. Sautee sweet onion with garlic in small pan until soft.

  5. Put all veggies including onion and garlic in a food processor on high until it looks like mashed potatoes. You might need to open it and double check there’s no large pieces that got stuck.

  6. Take the Pie Crust out of the freezer. Package comes with 2 Pie Crusts. Separate both crust and bake one crust in the oven at 300 degrees for 10 min.

  7. Filling. Fill the cooked crust with the lamb and evenly spread. Then pour the mash on top. According to your pan size, you may have a little extra. If you do end up having extra, I recommend saving that and mixing it with egg to make a fried breakfast patty out of it. Just an idea 😊

  8. Put the uncooked crust over pie and form to desired shape. (The more it thaws, the easier it is to form)

  9. Brush egg white all over top of pie crust.

  10. Put in oven at 350 degrees for 40 minutes. When done, put on low Broil for a minute or two, until light golden brown.

  11. Let cool for 15 minutes before serving.
